Once upon a time, I wanted to bake a cheesecake - so I did!
It was my first time deciding on cheesecake. I have baked in the past, so this was something new, but not unfamiliar. I bought the ingredients and baked the cheesecake.
I went about it like I went about baking my previous cakes. When is was "Done",
it tasted just like cheesecake! ONE PROBLEM..... I needed a straw to eat/drink it! I guess I had more than ONE problem...
When I baked my first cheesecake (Repeating the above! lol) I baked it like a regular cake, practically the same ingredients, just with cream cheese.
Back then, I used a store bought crust, so all I had to worry about was the cheesecake batter itself. Well, that's when I learned about cheesecake
being a custard, unlike the usual cakes I have known. Cheesecake requires more care, thought and after the initial frustration, a little passion.
Over the years, I decided to make my cheesecakes the best I could. For me, it started with the BEST ingredients. I know, business is all about the
margins; however, I will side with quality! My margins will be the satisfaction of those who enjoy our creations. We use only Philadelphia cream cheese; we don't stop there, we also use olive oil! Vegetable oil is usually what is used when it's used but olive oil is the best, in our estimation. When heavy whipping cream is used, we go with the highest quality there as well, not the cost effective no-frills brands. When we use fruits, we use REAL fruits in our fruit flavored cheesecakes!
Finally, we only go for the best brown organic eggs, where the chickens laying those eggs roam free on the farms in which they roam the pastures! Less stress on the chickens means creating a great environment for high quality, organic
eggs.
I don't try to be all things to all people. My focus is CHEESECAKE - for YOU! I found that one thing and I try to be exceptional, from my commercial kitchen. I'm a cheesecaker - ENJOY!!
